What's for dinner???

Last-minute thinking about dinner tonight… What to eat???

In the fridge:
-spring onion
-dried tomatoes in a pesto dressing

In the pantry:
-olive oil
-some pita bread

The answer:
Mini-pizza’s… Yummy!!

Sadly I can’t post the absolute gorgeous sent… So pics it’ll be!
(My apologies for the minimal quality, but daylight had already faded. I can’t wait for longer days!)

And sooooooo easy to make! Pita bread on an oven tray, drizzle with olive oil (or pesto), garnish with tomatoes, spring onion and mozzarella, season with pepper and salt. Slide tray in oven at 190° and bake until the bread is crunchy and the cheese has melted. Last, but crucial step: enjoy!
